Transcript:Jelly Roll Cake

Hi, I'm Elaine Lemm for About.com, and today I'm going to show you how to make a delicious Strawberry Jelly Roll Cake. This recipe comes from About.com's Baking Guide.

Ingredients

For our jelly roll you will need:

  • 1/2 cup flour
  • 1 teaspoon baking powder
  • 4 eggs
  • 1 teaspoon vanilla, divided
  • 1 cup sugar, divided
  • 1/2 cup butter, softened
  • 3 plus cups powdered sugarmilk, optional
  • 1/3 cup strawberry jam

Getting Started

So to begin our Jelly Roll Cake, into my mixer I'm going to put the egg yolks, half of the vanilla, and then we're going to beat this for about 5 minutes on a medium speed to make the eggs lovely and thick. There we are, that's the eggs looking really lovely and creamy and light.

I've divided the sugar into two and I'm putting one half into the eggs. Lovely, now I'm going to put the egg yolks mixture into another jug because I need now to whisk my egg whites. Into the bowl go our egg whites. That's lovely firm peaks, that's exactly right, so now we've finished with the mixer.

Into our egg white, I'm going to add back the egg yolks and, with a spoon, I'm very carefully going to mix the egg yolks and the egg whites together, we want to keep this as light as possible. Then onto there. I'm going to sprinkle the flour and the baking powder. Lovely, so now I need my baking tray. Here, I have a 15 by 10 inch jelly roll pan which greased and lined with some baking parchment and into there goes our lovely cake mixture. Then with a pallet knife just spread the mixture across the tin.

Put 'er in the Oven

This now needs to go in the oven at 375 degrees Fahrenheit for between 12 and 15 minutes.While our Jelly Roll is cooking I'm just going to prepare this dish towel with some powdered sugar for when the cake comes out of the oven. You know the cake is ready when you press it in the centre and it springs back.

So our Jelly Roll is cooked, I just need to gently loosen this from the edges of the pan, and then I'm going to dump this upside down onto our dish towel and then remove the paper. So now we're going to roll this in the dish towel and pop this on a wire cooling rack and leave it to cool.

Finishing Up

So our Jelly Roll's lovely and cold, I've got some strawberry jam here and then I have some lovely vanilla frosting. Now it's time to roll the Jelly Roll back up again, this time without the dish towel. This now really needs to go into the refrigerator for about 6 hours, or even possibly put it in overnight. It will be ready to serve, cover it with a little powdered sugar, absolutely delicious.
