Dried Fruit Scone Recipe

These delicious scones are flavored with dried berries and cherries, but you can adjust the recipe according to your taste.

Hi, I'm Rachel Edelman for About.com Food. Today I'm going to show you how to make homemade scones with dried fruit.

Ingredients for Scones With Dried Fruit

For this recipe you will need:
  • 2 cups flour
  • 1 cup dried fruit
  • 2 tablespoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 tablespoons sugar
  • 1/2 teaspoon nutmeg
  • 1/2 cup cubed butter
  • 3/4 cup buttermilk
  • 1 egg white
Preheat oven to 425 degrees.

Combine the Scone Ingredients

Pour the flour, sugar, baking powder, baking soda, salt, and nutmeg in a large mixing bowl. Whisk together all these dry ingredients.

Next, add the butter into the bowl. Cut it in with a pastry blender until the mixture resembles crumbs.

Then, stir in the dried fruit. I'm using a combination of dried strawberries, cherries, and blueberries. Now pour in the buttermilk. Use a rubber spatula to mix in the buttermilk; this will help bring the dough together.

Cut the Dough Into Triangles

Roll the dough into a ball. Flour a rolling surface and rolling pin. Place down the dough and roll out a rectangle so it's one-inch thick.

Grease aluminum lined baking sheets with non-stick cooking spray.

Using a pizza cutter, cut the rectangle in half, and then in half again. Take each square and divide it into two triangles. Place the triangles onto the sheet.

Bake the Scones

Finally, lightly beat the egg white. Brush the tops of the scones with the egg. Bake for 15 minutes, or until they are golden brown. Cool them on wire racks. Serve warm and enjoy.
