Hi, I'm Jacob Taxis for About.com. In this video, you will learn how to make Australian tuna-chickpea patties. This is a recipe from About.com's Australian Food site.

Australian Tuna-Chickpea Patty Ingredients

To begin, you'll need:

  • 3 cans of tuna, drained
  • 1 can of chickpeas, drained
  • 1/8 cup of olive oil
  • 1 small onion, finely chopped
  • 2 carrots, grated
  • 1 lemon, quartered
  • 2 cloves of garlic, finely chopped
  • 1 clove of garlic, grated
  • 1 handful of fresh cilantro, finely chopped
  • 1 handful of fresh parsley, finely chopped
  • 1 handful of mint, finely chopped
  • 1/2 tsp of sea salt
  • 1 tsp of chili flakes
  • 1 1/2 cups of natural yogurt
  • 1/2 cucumber, peeled and cubed
  • Breadcrumbs and flour for dredging 
  • Vegetable oil

Blend Chickpeas and Add Tuna

First, in a food processor or blender, blend the chickpeas with the olive oil until it resembles a puree. Pour or scoop this chickpea blend into a large bowl for mixing.

Next, add the tuna into the bowl, along with the chopped garlic, onion, parsley, cilantro, chili flakes, grated carrots, and sea salt. Be sure to stir the mixture very well.

Forming the Patties

With your hands, form little balls out of the mixture and flatten them into small patties. Cover and refrigerate the patties for one half hour. Refrigerating them makes the patties easier to fry because the ingredients bind together. When the patties have chilled, remove them from the refrigerator and dredge them with flour and breadcrumbs.

Freezing the Patties

If you'd like to prepare tuna-chickpea patties for a future meal, simply freeze them at this point. They'll remain fresh for over two months. When you're ready to make them, remove the patties from the freezer and allow them to thaw before frying.   

Frying the Tuna-Chickpea Patties

In a large frying pan, heat a tablespoon of vegetable oil. Fry the patties on both sides until they are golden brown, placing the finished patties on a paper towel. Fry the patties a second time if they seem a bit too moist.

Serving the Patties

Finally, in another large bowl, mix together the yogurt, mint, grated garlic, and cucumber. Serve this mixture on the side with your patties. Also, add lemon wedges to the side of each plate to bring to the dish an added touch of flavor.
