Transcript:How to Make Seared Cod With Red Pepper Coulis

Hi, I'm Katherine Lee for About.com, and this is Danielle Butler-Leu, a fabulous chef. Today we are going to make a seared cod. You know how much I like seared fish, with a sweet roasted red pepper sauce that is quick and easy and beautiful.

Ingredients for the Seared Cod With Red Pepper Coulis

  • 1 tbsp butter
  • 1 12-ounce jar of roasted red peppers (drained)
  • 3 cloves garlic, chopped
  • 1 shallot, diced
  • 1 c. chicken / vegetable stock
  • 1/2 c. olive oil
  • 2 cod filets
  • salt and pepper
  • basil oil

Prep the Sauce for Seared Cod With Red Pepper Coulis

So you have how much butter in here right now? About a tablespoon of high quality butter. And some shallots -- about one small shallot. Go ahead, just dump that in there, and about two cloves of garlic. These are sweet roasted peppers -- this is what cuts our cooking time in half. Now drain the liquid out of there, and I'm going to have you put this in the pan. So throw the whole thing in there like that?

Turn this down to simmer, and we're going to add about a cup of chicken stock (or you can use vegetable stock), and we're going to reduce that until there's no more liquid in the pan.

Cook the Fish for Seared Cod With Red Pepper Coulis

This is just simple pieces of cod. I usually do a half-pound per serving. I'm going to go ahead and season our cod with salt and pepper. This is a basic simple sear -- you can do this sear on salmon, on any kind of fish. I usually start it in the pan and then I finish it in the oven. And I'll go ahead and season the other side -- and be generous! I don't like stingy seasoners.

Alright, let's check this and see how it's doing. It needs a few more -- I would say another minute. So what are we looking for? Like a golden-brown color? Yeah, something that's going to make you hungry. Look at that -- these are already flaking apart, so you know they're ready. I want to eat that right now. We're just going to put it in a shallow baking pan, and finish it in the oven.

Finish the Sauce for Seared Cod With Red Pepper Coulis

And this is our sauce. That's okay if there's about a tablespoon of liquid in there. And it smells great but we're going to Cuisinart this, okay? Okay, so you see how smooth that is now? So now what we're going to do is add about a half cup to a cup of olive oil.

Looks pretty perfect! And how many minutes was this in the oven for again? About five more minutes -- just while we assembled the sauce together. This was a very quick dish.

Serve the Seared Cod With Red Pepper Coulis

Okay, I feel like I'm in a fancy restaurant. This could be a weeknight meal because it was so easy and so fast. If you thought you were in a fancy restaurant before, you're going to be in one now, because I happened to make some basil oil. And it's just colorful and beautiful. This is amazing, it's so beautiful. I want to make this for dinner tonight! You better! Can I come over? Yes.
