Transcript:How to Make Potato ChipsHi, I'm Chef Roblé with About.com. Today we're going to learn how to make our very own home made potato chips.
Potato Chip IngredientsAnd here are our ingredients. Kosher salt, garlic salt, smoked paprika and two Idaho Russet Potatoes washed and scrubbed.
Slice the Potatoes ThinSo you want to slice your potatoes to about the thickness of a dime using a vegetable slicer or a mandolin like I have here. This is called a Japanese Mandolin. So you just want to bring the potato across the blade in a nice straight, clean, strong motion. Once you get going you can go faster. This Japanese Mandolin makes short work of this potato. You want to be careful not to cut our fingers as you get to the edge of the potato.
Deep Fry Potato SlicesNow that we have our potatoes nicely sliced off, we're going to begin to fry them in 300 degree vegetable oil. Drip them into the oil individually as to keep them from sticking. Just give the basket a nice little shake. Move them around a little. If you don't have this kind of a fryer at home you can always take a Dutch oven or a pot. Use one of those with a candy thermometer at 300 degrees. Monitor the temperature using a candy thermometer or high temp thermometer. Keep moving these around. Keep these from sticking.
Cool Potato SlicesOk, we're going to remove the potato chips. Shake off any excess oil and drop them onto this trey which I like to call a landing pad. Just a cookie sheet with some paper towels which will absorb any excess oil which were left on the chips. We're just going to let these cool a little bit and then we will begin to season them.
Potato Chip FlavorsOk, so were going to do the first of 3 flavors. These are our plain salted potato chips. right in a bowl. Just mix in a little bit of salt. Mix it around and there we have plain potato chips.
Now were going to do our second flavor of potato chips with this smoked paprika is super yummy. A little bit of that right on top. A little bit of salt and here we have our smoked paprika potato chips.
And for our third and final flavor, garlic potato chips. Here we have garlic salt. Just gonna sprinkle a little bit of that over. Toss it around, toss it around. Aaah....take a little bit more. just kinda eyeball it. And there we have it. Super easy super quick. Three different flavors of potato chips.
