Transcript:How to Make Clams CasinoHi. I’m Chef Roblé for About.com. Today we’re going to learn how to make a New England classic, Clams Casino.
Ingredients for Clams Casino:
- 1/4 cup small iced red peppers
- The juice of one lemon
- 1 teaspoon Worcestershire sauce
- 2 teaspoons finely diced shallots
- 1 1/2 stick of softened unsalted butter
- 2 slices of smoked bacon
- 1/4 cup unseasoned bread crumbs
- Plenty of sea or rock salt
- 1 dozen large little neck clams
Cut Bacon into 12 Pieces and CookSo here we have our two slices of bacon which we are going to cut into 12 pieces for our 12 clams. So take it once, cut it in half. Now we have four pieces were going to cut these four pieces into thirds, which is going to give us twelve pieces. One cut right here, that’s four, 8 and 12 pieces of bacon. I have a cookie sheet with a little bit of wax paper.
I’m going to lay out my 12 pieces of bacon and let them cook right on this cookie sheet. I'm going to put it in an oven at 350 degrees for twelve minutes.
Boil Clams for Clams CasinoIn this pan I have one cup of water which I have brought to a boil over high heat. I’m going to add my clams directly into this pot. Clams are in there...cover this pot and let the clams steam for 4 minutes this will open the clams up.
Create Stuffing for Clams CasinoHere is our bacon after 12 minutes in the oven. were going to take it off this pan and save it for assembly of the clams casino. 4 minutes later and our clans have opened up.
Put your plans into a bowl and let them cool off while you make the stuffing. And now for the stuffing were going to mix the bread crumbs, the minced garlic, the butter, the red peppers, the lemon juice, the Worcester sauce, the minced shallots. I’m going to take a rubber spatula and mix it all together. Here I have a nice medium sized saute pan. I’m going to sprinkle sea salt in here until I get about 1/3. of an inch or so. I just want enough to help the clams to stand up straight and not tip over while they are baking. You see I’m just taking these clams, taking the top off and loosening up the piece of meat on the inside, popping it back in the bottom of this pan. The salt helps it to stand up straight.
Assemble Clams CasinoSo we have all of our clams nicely in the bottom of the pan. They are all disconnected from the shell and they are all standing up. When I put a teaspoon of our stuffing mixture on top of each one of the clams. Now we are going to place a piece of our bacon on top of each one of the clams. 450° oven were going to cook our clams casino..... and 7 minutes later here are our clams casino.
