Hi, I'm Stephanie Gallagher for About.com, and today, we're making frozen pumpkin pie. Let's get started.Ingredients for Frozen Pumpkin Pie
For this recipe, you will need:- 1/2 cup chopped pecans
- 1 pint of vanilla ice cream or vanilla frozen yogurt, softened
- 1 cup of canned pumpkin puree
- 1 tsp. pumpkin pie spice
- 1/2 cup brown sugar
- 1 graham cracker crust
- 7 to 9 oz. of frozen whipped topping
- caramel sauce for drizzling
Toast the Pecans
Start by placing the pecans in a dry skillet over low heat. Toast until golden brown and fragrant. Set aside.Create Pumpkin Pie Filling
Place the softened ice cream in a large bowl. Add the pumpkin puree to the ice cream, then add the pumpkin pie spice and the brown sugar. Now you can see, I'm adding a little less brown sugar than I call for in the recipe because my family doesn't like it too sweet. You can always taste the pumpkin pie filling to make sure it's sweet enough for you.Pour Filling into Graham Cracker Crust
Mix it all together and pour it into the graham cracker crust. If you're feeling ambitious, you could make your own graham cracker crust, instead. But the store-bought crust works just fine, too.Freeze the Pumpkin Pie
Smooth it over, and freeze the pie until firm, about 2-3 hours.Add Whipped Topping to the Frozen Pumpkin Pie
Spread the frozen whipped topping over the ice cream pie. It helps to let the topping thaw at room temperature for 20 minutes or so. That makes it easier to spread on the pie. Make sure the frozen whipped topping covers the pie completely and is nice and smooth on top.Sprinkle on Pecans
Next, sprinkle the toasted pecans on top of the whipped topping, and return the pie to the freezer for another hour or so.Cut and Serve Frozen Pumpkin Pie
