Easy Avocado Lobster Rolls

You can make your lobster rolls a little healthier by adding avocado to them instead of mayo. See how to make quick and easy avocado lobster rolls on toasted buns.

Hi, I'm Rachel Edelman for About.com Food. Today I'm going to show you how to make avocado lobster rolls.

Avocado Lobster Roll Ingredients

For this recipe, you will need:
  • 4 hot dog buns
  • 2 ripe avocados
  • 1 tablespoon fresh lemon juice
  • 1 small red onion
  • dash of hot sauce
  • salt & pepper
  • 1/2 pound of cooked lobster meat

Toast the Rolls

First open up the hot dog buns and lightly toast them.

Cut and Prepare the Avocado

In the meantime, cut the avocado lengthwise, so they are cut all the way around. Twist the halves and using your knife, strike and remove the pit. With a small paring knife, lightly cut the avocado. With a spoon remove the avocado from the peel and place it in a mixing bowl.

Use a potato masher to mash the avocados until they are smooth. Add the lemon juice and stir. This will also prevent the avocados from browning.

Chop the Onion

Cut the red onion in half. Peel off the outside layer. Cut the onion, so there are thin cuts. Then, turn the onion and thinly slice again, so you have finely chopped onion. Do this with both sides of the onion. Run your knife through the pieces a few more times, so the pieces are nice and small.

Prepare the Lobster Mixture

Add to the onions to the mixing bowl the red onion and a dash of hot sauce. Also season with salt and pepper. Give this a stir. If you would like it more spicy, add extra hot sauce.

Last, add the lobster meat into the bowl. Gently coat the meat with the avocado mixture. Place a few spoonfuls of the mixture into each hot dog bun. Enjoy.
