Hi! I'm Heidi Dehncke-Fisher and welcome to About.com Food. Today I am going to make one of my personal favorites: homemade chicken Parmesan heroes. Where Does the Hero Sandwich Originate? During the late 1800s Italian immigrant workers in New York invented the hero sandwich.Chicken Parmesan Ingredients
To make my chicken Parmesan heroes (for a family of 4) you will need:- 2 loaves of Italian bread
- 2 lbs. of chicken cutlets (breast meat fillets)
- 26 oz. of your favorite tomato sauce
- 16 oz. of mozzarella cheese
- 2 eggs
- a dollop of milk
- bread crumbs seasoned with Italian herbs and Parmesan for coating the chicken
- olive oil - about an eighth of an inch to a quarter of an inch of olive oil depending on the thickness to fry the cutlets
Prepare the Chicken Cutlets
First you have to wash your chicken cutlets. Then you have to make a mixture of 2 eggs and a dollop of milk which you whisk so you can coat your chicken cutlets. Then coat the cutlets in a layer of Italian seasoned breadcrumbs. Cook on medium heat for about 10 minutes - 5 minutes on each side or until each side reaches that golden brown color.Rest the cutlets on a plate with 2 paper towels so the extra olive oil can be soaked into the paper.
Next, begin to heat your oven at 275 degrees. While the oven is pre-heating, heat your sauce briefly on the stove using low heat.
Arrange the Chicken Parmesan Cheese
Now take your fresh mozzarella and cut enough pieces to cover all of the hero sandwiches with the delicious cheese at home you can be as generous as you like.Arrange the Chicken Parmesan Sandwiches
I like to use bread baking pans or anything similar to cook the heroes in this way they don't fall all over the place and it makes it easier to close them up when they come out of the oven. Lay the bread in the pan lengthwise, pour some tomato sauce across (not to much sauce but some to flavor the other side). Lay your cooked chicken cutlets on the bread. Pour some tomato sauce across and top with your cheese.Bake the Chicken Parmesan Heroes
